A yummy and easy green hummus with fresh minty flavours
Ingredients
400g can chickpeas, drained
1 cup frozen peas
1 cup fresh mint leaves
¼ cup hot water
¼ cup extra-virgin olive oil
¼ cup tahini
1 clove garlic, peeled and sliced
2 tbsp white wine vinegar or lemon juice
salt and freshly ground black pepper
extra mint leaves, to serve
Method
Place chickpeas and peas in a medium saucepan and just cover with water. Bring to the boil then remove from heat and drain, reserving ¼ cup hot water.
Place hot chickpeas and peas into a food processor with mint, hot water, oil, tahini, garlic and vinegar. Season well with salt and pepper.
Process for 2 minutes or until smooth, scraping down sides to ensure well combined.
Serve topped with extra fresh mint leaves with naan or pita bread, crackers or veggies for dipping.
Makes 2 ½ cups. Keep refrigerated for up to 5 days.
